Black Bean and Sausage Stew |

1 tablespoon olive oil 1/2 cup chopped onion 1/4 cup chopped green bell pepper 4 oz. smoked sausage, cut into 1/4-inch pieces 2 cloves garlic, minced 1 cup canned black beans, drained 3/4 cup stewed tomatoes, undrained 1-1/2 teaspoons dried oregano leaves 3/4 teaspoon ground cumin 2 tablespoons minced parsley Hot pepper sauce, to taste Heat oil in medium skillet over medium heat. Add onion, pepper and sausage. Cook and stir 3-4 minutes or until vegetables are tender. Add garlic. Cook and stir 1 minute. Stir in beans, tomatoes, oregano and cumin, breaking up tomatoes into small chunks. Bring to a boil; reduce heat to low. Cover and simmer 20 minutes, stirring occasionally. Stir in parsley and hot pepper sauce. |
