Cheddar Onion Bread |

2 large eggs 2/3 cup milk 1-1/3 cups whole wheat flour 1 cup all-purpose flour 1-1/2 tablespoons baking powder 3/4 teaspoon salt 1/2 teaspoon coarsely ground black pepper 3 tablespoons unsalted butter, room temp. 1 cup Cheddar cheese, shredded 1 cup minced yellow onion Spray a 9x5x3-inch loaf pan with nonstock spray. In a small bowl, whisk egg together with milk. In a large bowl, stir together flours, baking powder, salt and pepper. Using a pastry blender, cut in butter until coarse crumbs form. Make a well in the center of the flour mixture. Add egg mixture all at once. Stir just until flour disappears. Fold in cheese and onion, then spoon batter into pan. Bake at 350 degrees for 1 hour and 10 minutes or until a toothpick inserted in the center comes out with moist crumbs. Cool in the pan on wire rack for 5 minutes, then remove and cool completely. |
