Four-Cheese Chef's Salad |

Salad 1-1/2 cup broccoli, broken into small pieces 1 lg. tomato, sliced into thin wedges 4 oz. smoked turkey, cut into 1/2-inch strips 1/4 cup cubed Cheddar cheese 1/4 cup cubed Monterey Jack cheese 1/4 cup cubed mozzarella cheese 1/4 cup crumbled feta cheese Blue cheese salad dressing (see below) Toss all salad ingredients in a large serving bowl. Add dressing and toss well to coat. Dressing 1/2 cup sour cream 1/4 cup cream style cottage cheese 1/4 cup mayonnaise 3/4 cup crumbled blue cheese 2-3 tablespoons milk In a blender, combine sour cream, cottage cheese, mayonnaise and 1/4 cup of the blue cheese. Cover and blend until smooth. Stir in remaining blue cheese. Add milk until dressing is of desired consistency. Refrigerate in covered container until needed. |
