Greek Salad |

8 leaves romaine lettuce 2 tomatoes, cut into eighths 1 medium red onion, sliced 1/2 cucumber, sliced 2 oz. feta cheese, crumbled 3 tablespoons chopped parsley 8 oil-cured black olives 4 anchovies (optional) Onion vinaigrette (see below) Salad Slice lettuce with knife into 1/8-inch-wide strips. Combine all ingredients in medium serving bowl. Serve in individual bowls, adding vinaigrette to taste. Vinaigrette 1/2 cup salad oil 1/3 cup white wine vinegar 1 tablespoon sugar 2 teaspoons snipped fresh basil 1/2 teaspoon paprika 1/4 teaspoon dry mustard 1/8 teaspoon fresh black pepper 2 tablespoons chopped green onion Combine ingredients in a screw-top jar and shake well. Refrigerate until needed. |
