Haupia (coconut pudding) |

6 cups grated coconut (about 2 coconuts) 2 cups boiling water 3-1/2 tablespoons sugar 3 tablespoons cornstarch (soft pudding) OR 6 tablespoons cornstarch (firm pudding) Pour boiling water over coconut and allow to stand for 15 minutes. Strain through double thickness of cheesecloth, squeezing out just as much of the milk as possible, about 3 cups. Mix cornstarch with sugar and add sufficient coconut milk to make a smooth paste. Boil until it thickens. Pour into mold and allow to cool. Cut into squares and serve on ti leaves or spinach leaves. |
