Lomi Lomi Salmon |

1 pound salted salmon 5 lg. ripe tomatoes, peeled Crushed ice 1 medium onion, finely chopped 1 bunch green onions, thinly sliced, with tops Soak salmon in cold water for 3 hours. Remove the salmon from the water and remove skin and bones. Using a fork, shred salmon to a fine texture. Place tomatoes in a large bowl and mash with a fork or squeeze to a pulp. Add the salmon, onion and green onions to the tomoto mixture and mix until well blended. Chill. Just before serving add crushed ice. Before storing, drain some of the excess liquid but leave some liquid in to keep moist. Can be served with crackers. Serves 8 |
