Potato Salad with Attitude |

5 good-sized red potatoes 4 or 5 large eggs, hard-boiled, peeled 1/2 to 1 cup mayonnaise 1/2 cup yellow mustard 1 small red onion, chopped Paprika Chopped parsley Cube and boil potatoes, leaving the skins on. Set aside and allow to cool. Slice potatoes and eggs into medium-sized bowl. Mix in mayonnaise (just enough to hold everything together). Add mustard and onion. Serve with sprinkling of paprika and parsley. |
