Spicy Pumpkin Chili Soup |

1 can (4-oz.) diced green chilies 1/4 cup sour cream 1/4 cup fresh cilantro leaves 1 can (15-oz.) solid-pack pumpkin 1 can (14-oz.) chicken broth 1/2 cup water 1 teaspoon ground cumin 1/2 teaspoon chili powder 1/4 teaspoon garlic powder 1/8 teaspoon ground red pepper In a blender, combine green chilies, sour cream and cilantro; blend until smooth. Combine pumpkin, chicken broth, water, cumin, chili powder, garlic powder and pepper in medium saucepan. Stir in 1/4 cup green chili mixture. Bring to a boil. Reduce heat to medium. Simmer uncovered 5 minutes, stirring occasionally. Pour into serving bowls (makes 4 servings). Top with a small dollop of remaining green chili mixture. |
