1/2 lb. boneless pork loin
1/2 cup chopped onion
1 teaspoon vegetable oil
1 can (16-oz.) navy beans, drained
1 can (16-oz.) chick peas, drained
1 can (16-oz.) white kernel corn, drained
1 can (14.5-oz.) chicken broth
1 cup cooked wild rice
1 can (4-oz.) diced green chilies, drained
1-1/2 teaspoons ground cumin
1/4 teaspoon garlic powder
1/8 teaspoon hot pepper sauce

Cut pork into 1/2-inch cubes. In 4-qt. saucepan, saute pork and onion in oil over medium-high heat for 5 minutes, or until onion is soft and pork is lightly browned. Stir in remaining ingredients. Cover and simmer for 20 minutes. Serve garnished with parsley.
