Classic "Too-Sweet" Yams |

4 yams or sweet potatoes 1 cup orange juice 1-1/2 tbs. cornstarch 1/4 cup pure maple syrup 1 tsp. grated orange rind 1/2 tsp. grated lemon rind 1/4 tsp. salt Cook yams, peel and slice into a baking dish. Combine half of the orange juice with cornstarch and stir to dissolve starch. Add remaining orange juice and other ingredients and bring to a boil, stirring constantly. Simmer until thick and clear. Pour glaze over the yams. Sprinkle with mini-marshmallows and broil until golden brown. |
